Delicious, quick recipe to start the new year: Baked potatoes with herb curd

It’s also easy to prepare without much effort – perfect for stressful days spent studying for exams!

Ingredients (serves 2):

  • 4 medium-sized potatoes (waxy or predominantly waxy)
  • 200 g curd (low-fat or vegan curd)
  • 1 bunch of chives, finely chopped
  • 1 bunch of parsley, finely chopped
  • 1 garlic clove, crushed
  • Salt, pepper
  • Optional: a dash of olive oil

Preparation:

  1. Prepare the potatoes: Thoroughly wash the potatoes, as they'll be cooked with their skins on. Prick them with a fork to ensure even cooking.
  2. Baking: Wrap the potatoes in aluminum foil and bake in a preheated oven at 200 °C (top/bottom heat) for about 45 minutes. Alternatively, you can bake them directly on a baking tray without foil—for a crispy skin!
  3. Prepare the herb curd: While the potatoes are baking, mix the curb with the finely chopped herbs and crushed garlic clove. Season with salt and pepper. If desired, add a dash of olive oil for a creamier texture.
  4. Serving: Remove the baked potatoes from the oven, slice open in the center, and serve with the herb quark. Optionally garnish with fresh herbs.
